We’re really big into infusing different tastes and textures into some of our favorite foods, which inspired us to create this coconut lime quinoa rice recipe for all of you to try!
This recipe, like many of our other recipes, requires minimal prep without compromising taste or freshness! In fact – this dish tastes so good the day after, we often make extra to store for leftovers. Who doesn’t love leftovers?!? Seriously.
What you’re gonna need:
- 1 cup uncooked rice
- 1½ cup water
- 1 Tablespoon coconut oil
- 1 cup coconut milk
- Zest and juice of 1 lime
- Salt to taste
What you’re gonna do:
- Add water and coconut oil in a pot on medium high heat. Bring to a boil and then add rice.
- Turn heat down to low, cover and simmer for 15 minutes.
- Take pot off the heat, add the coconut milk, zest and juice from the lime, and salt and cover and allow to sit for 10 minutes to steam.
